Update table for 6.1.1 release

Update the table of releases (6.1.1 replaces 6.1.0), and create
the associated release file.

Varnish Cache 6.1.1 is a bug fix update for Varnish Cache 6.1, and it contains many bug fixes.
This release is a recommended upgrade for all users of 6.1.0.
If upgrading from 6.0, you should not expect to encounter any problems. However, VMODs and and VUT programs have to be recompiled.
